Introduction

I recently had my gallbladder removed and am part of a small percentage of people that cannot process high amounts of fat. Last year, around Thanksgiving and Christmas, I was desperatly looking for low fat side dish alternatives and came across this. It is absolutely amazing! My entire family LOVED it and wanted the recipe!

Of course this can really be made for any occasion and changing up the color of the peppers can make the dish festive for holidays!

Number of Servings: 6

Ingredients

    2 cups dry macaroni or ditaloni
    1 cup sliced celery
    1 cup chopped red pepper
    1/2 cup cucumber, sliced and quartered
    1/2 cup chopped red onion
    1/3 cup fat free mayonnaise
    1/3 cup Fat-Free Greek yogurt (low fat plain will work, too but are not included in the nutritional calculation)
    1 tbsp Dijon mustard

Directions

Cook macaroni according to package directions. Drain and rinse with colde water to cool. In a lrge bowl, combine cooled macaroni, chopped celry, pepper, cucumber, and onion. In a small bowl, combine mayonnaise, yogurt, and mustard. Add to pasta salad and toss well to coat. Chill at least two hours.
