Ingredients

    2 tbsp non-flavored hemp protein powder or other protein powder *see note
    1 tbsp cocoa powder
    1/4 cup egg whites
    1 tbsp unsweetened apple sauce
    10 drops liquid stevia or 1/2 tbsp honey or other sweetener (not included in nutrition calculations, as I used stevia or Splenda)

    *Note: If using whey protein, I recommend the following:
    1. Do not use 3T of protein powder. Stick with the 2:1 protein-to-cocoa ratio above.
    2. Be sure to thoroughly mix your whey protein - you may want to use a shaker for this.
    3. Be sure not to overcook. I only had to bake mine for 15 minutes before it was done.

Directions

1. Preheat oven to 375F.
2. Combine all ingredients in a small bowl and mix until fully incorporated.
3. Drop mixture into a ~250mL (1 cup) oven-safe ramekin.
4. Place in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted comes out clean.

Serving Size: Makes 1 souffle-like protein cake.
