Number of Servings: 12

Ingredients

    Dry ingredients
    1/2 tsp xanthan gum
    1/2 c flax meal
    1 1/2 c gluten-free flour
    1/4 tsp salt
    2 tsp baking powder
    3/4 tsp baking soda
    1 tsp cinnamon
    1/4 tsp allspice
    1/4 tsp cloves
    3/4 c brown sugar

    Wet ingredients
    2 eggs
    1/4 c canola oil
    1/4 c water

    Stir-ins
    1 c grated carrots
    1/2 c raisins
    1/2 c chopped walnuts

Directions

Mix dry ingredients together.
Mix wet ingredients together and add to dry.
Mix.
Stir in carrots, nuts and raisins.
Put batter in greased can , cover, set on rack in crockpot.
Add 2 c hot water.
Cook on high for 3 hours
