My son went off to college and returned a true health nut...and he loves cooking interesting recipes. This one tastes like a desert but is loaded with nutrition instead of empty calories. Ingredients

    * Sweet potato, 6 cup, cubes
    * Olive Oil, 3 tbsp (optional)
    * Raisins, .33 cup (not packed)
    * Almonds, .25 cup, slivered
    * Banana, fresh, 2 medium (7" to 7-7/8" long)
    * Cinnamon, ground, 1 tsp
    Pam

Directions

Chop up the sweet potatoes into a little bigger than hash brown size. Spray a deep skillet with Pam, Saute sweet potatoes with the 3 tablespoons of oil. Cover and cook for 10 minutes. Toss in the cinnamon, raisins and almonds and cover for an additional 10 minutes. Once the potatoes are soft, slice in the bananas, cook for another 2 minutes. This is a filling and delicious food!

Serving Size: Makes 8 servings.
