Introduction
I had this salad at Hub 51 in Chicago during a memorable Girls weekend. Now that I am pretty much vegan I have taken the gruyere cheese out of the mix but it is quite tasty with it, so add it if you want. I also would usually make my own Honey mustard vinegarette but for calorie and time-sake here I have used a bottled low-fat Honey mustard dressing. Ingredients

1 pound brussel sprouts, stemmed and leaves pulled apart
1/2 c. craisins
1/2 c. dry-roasted almonds
6 T. low-fat honey mustart dressing
Directions
1. Stem and pull the leaves off of the brussel sprouts to make the 'lettuce' for the salad.
2. Add sprout leaves, craisins and almonds in a bowl and toss with the honey mustard dressing.
3. Season with a dash of salt and pepper to taste and serve.
