Introduction

I love this stew! It is so easy and leaves me feeling satisfied. I use 3/4 cup as a serving. If it is too spicy for you, substitute a can of diced tomatoes for one of the diced tomatoes w/chilies. Ingredients

    1 onion, chopped
    1 16-oz can black beans
    1 16-oz can kidney beans
    1 16-oz can corn (drained)
    1 8-oz can tomato sauce
    2 14.5-oz cans diced tomatoes w/chilies
    1 1.25-oz packet taco seasoning
    1-2 boneless skinless chicken breasts

Directions

Mix everything together in a slow cooker except chicken. Lay chicken on top and cover. Cook on low for 6-8 hours or on high for 3-4 hours. 30 minutes before serving, remove chicken and shred. Return chicken to slow cooker and stir in. This is good eaten with cheese, sour cream, or tortilla chips.

    Excellent! I will make it again. Quick note though, when I measured out 1 cup servings it only came out to 8 servings, so I am having to go redo the nutritional information so it comes out correctly. - 2/13/09

    We love it! I have made it with chicken and ground turkey and both turned out yummy. For the beans I put in green beans (hubby does not eat beans) and it is very good. we serve it over corn chips with cheese and sour cream. - 2/20/09

    Oh my goodness! Ridiculously easy, and so delicious! Not at all spicy enough for me, though. I'll be adding some hot sauce and adding some canned chipotle peppers next time I make it. - 2/19/09

    Cooked it for the 1st time tonight. Was quick to put together, made the house smell WONDERFUL as it was cooking. It was absolutely deliciuos!! My family raved on it. WIll definately cook this again for another family get together. - 2/11/09

    Great tasting recipe. Made a few changes to go lower salt though. Use whole tomatoes just cut them up,rinse the beans from the cans, use low salt taco seasoning and cut the amount in half, i threw in cut up fresh whole mushrooms, and use 100% whole wheat pitas to dip. Cut them into triangles. - 1/19/09
