Introduction

Ingredients

1 lb pitted dates
1/2 lb candied pineapple
1/2 lb each red & green candied cherries
1 lb shelled pecans
Put in bowl.
Add: 1 C sugar
1/2 C melted butter
4 beaten eggs
1 t vanilla
Combine and sift into above mixture:
1 C flour
1 t baking powder
1/2 t salt
Directions
Mix together. Press into two loaf pans lined with foil. Cover loosely with foil. Bake at 275° for 1-1/2 to 2 hours. Cool before removing from pans (a couple of days, even).
Now, when I made it this time, I only had 8 oz of dates, so I used brown sugar and 4 oz of dried cranberries, soaked, to make up for it. Also, I had 1 lb of red cherries. That is what the nutritional info is based on.
I bake these in mini loaf tins (9 loaves=@12 cupcakes) and cupcake cups
