    1 Avocado
    1 Mango
    1 Small red onion
    1 C Beets (marinated)
    1/2 C Dry couscous
    1 T Olive oil
    1 T Balsamic vinegar
    1t lemon juice


Cook the couscous (following the instruction). Cut the veggies and add ti the couscous. Mix and serve cold.
