Ingredients

    For the chicken:
    4oz dannon light & fit yogurt
    1 sm jalenapeno diced small
    1 stalk celery chopped small
    2 tsp garlic
    1 tsp lime juice
    2 tsp paprika
    1.5 tsp ground cumin
    1 tsp coriander
    4 boneless chicken breasts (12 oz)
    For the rice:
    1 scallion chopped
    .5 Tbsp extra virgin olive oil
    3/4 cup brown rice quick cooking
    1 Tbsp orange rind
    1.5 cups of water
    1 Tbsp cilantro


Tips

This is a great dish, calories are for both chicken and rice, makes 4 equally divided servings.


Directions

for chicken combine all ingredients except chicken, brush onto chicken front and back, refrigerate 3-4 hrs or overnight. Place chicken on baking pan/dish and roast 350 degrees 30-45 minutes till juices run clear.

Rice: Saute onion, celery in olive oil till tender about 3 minutes, add rice and orange rind cook over med heat until lightly browned, about 2 min. Add water, heat to boiling, reduce heat simmer and cover until rice is tender about 20 min. stir in cilantro...serve with chicken
