Ingredients

    Avocado, 5-6 oz (150g), cut into pieces
    Cherry Tomatoes, 1/2 cup whole, cut in halves
    Onions, raw, 1/4 cup, sliced
    Parsley, fresh, 1/4 cup, chopped
    Artichoke Hearts in water, 1-2 pieces (45g)
    Garbanzo Beans, 1/2 cup, drained and rinsed
    Black Olives, 6-8 large, whole
    Black Pepper & Salt
    Lemon Juice, fresh, 1/2 tbsp
    Olive Oil, 1 tsp

Directions

1. Drain and rinse garbanzo beans, olives and hearts of artichokes. Cut avocado and artichokes into bite-size pieces. Slice onions. Cut cherry tomatoes in halves. Chop parsley.
Put everything into a bowl, add whole olives, salt & pepper. Drizzle with lemon juice and olive oil. Mix the salad and cool.

Serving Size: Makes 3 1-cup servings.
