Ingredients

8 oz pork tenderloin, center cut, boneless
8 cloves of garlic, minced, divided
1/4 cup soy sauce, divided
1/8 tsp. black pepper
1 tsp. sesame oil
1 Tbsp. olive oil
2/3 cup sliced almonds
4 stalks celery, chopped
3 carrots, chopped
4 oz. mushrooms, sliced
1/2 head cabbage, chopped
1 bell pepper, cut in 1/4 and sliced
1 leek, chopped
3 1/2 cups rice
Directions
Make rice in rice-cooker.
Slice the pork into thin strips. Marinate in 4 cloves of garlic, sesame oil, black pepper, and 1 Tbsp. soy sauce. Saute in hot pan about 2 minutes. Remove and set aside; keep warm.
In saute pan, heat olive oil. Add remaining garlic and almonds. Saute till fragrant. Remove from pan and set aside.
Add carrots and cook till crisp-tender. Add celery and bell peppers. Saute for a few minutes. Add mushrooms, cabbage, and leeks. Saute till tender. Add remaining soy sauce, pork, and almonds. Stir to mix.
Serve over 1 cup of rice.
