Ingredients

    1 lb. 93% lean ground beef
    1/2 cup Japanese Panko breadcrumbs
    4 scallions, green and white parts finely chopped
    1 large egg plus 1 egg white
    1 teaspoon lite soy sauce
    4 teaspoons fresh grated ginger
    4 cloves of garlic, minced
    1/2 cup barbeque sauce
    1/4 cup Chinese plum (or duck) sauce
    2 tablespoons Hoisin sauce
    1 teaspoon Sriracha (hot chili garlic sauce)

Tips

Add more sriracha to taste if you like a spicier sauce.
You could easily speed up the cooking time by baking the meatballs in the oven (about 30 minutes at 350), then reheating them later in the sauce.


Directions

1. In a large bowl, combine beef, panko, scallions, egg, soy sauce, ginger, and garlic. Mix thouroughly but gently with your fingers. Roll into 1-inch balls.
2. Mist slow cooker (crock pot) with nonstick cooking spray. Add meatballs. In a small bowl, whisk together barbeque sauce, plum sauce, hoisin sauce, and sriracha. Pour over meatballs. Gently stir to coat.
3. Cover and cook on low until meatballs are cooked through, about 4-5 hours.

Serving Size: Serves 4-6 (dinner portion) or 10-15 (appetizer)
