Ingredients

    2 tsp olive oil
    1 1/4 lb lean ground beef, turkey or shredded chicken
    1 onion, chopped
    2 cloves garlic, chopped
    1 bell pepper, seeded and chopped
    1 can (14 ozs) crushed tomatoes
    1 bottle (32 ozs) reduced sodium vegetable cocktail juice
    1 Tbsp fresh lemon juice
    1 can (14 ozs) beans, drained and rinsed
    1 Tbsp ground cumin
    1/8 tsp cayenne
    1/4 cup each fresh cilantro and parsley, chopped

Tips

Very quick and easy soup to make! Delicious!

I prefer to use lean sweet italian turkey sausage, it gives the soup a little extra kick. I serve with a Tbsp of Parmesan cheese on top.


Directions

**In a stock pot, heat olive oil over medium high heat. Saute meat until cooked through, about 5 minutes. Drain and set aside.
**Saute onion, garlic, and peppers until soft. About 5 minutes.
** Stir in remaining ingredients, except parsley and cilantro. Cover and simmer 20 minutes. Stir in cilantro and parsley. Cover; simmer 10 minutes longer. Store in refrigerator up to 5 days. Freezes well.

Serving Size: each serving is 3 cups

    This recipe is not exactly like the Womens world recipe- it leaves out the 8 oz. of mushrooms which are, IMO, very important for taste and heartiness. - 2/21/16

    Incredible!
    I make this with ground turkey and high fiber vegetable juice. Have been making this for several years. I am not sure about its fat flushing ability but it is really delicious and filling. I double the recipe and am always glad I did. - 3/9/15
