Ingredients

    * 2 cups leftover turkey, cut into bite-size pieces
    * 2 cans Campbell's Cream of Chicken Soup
    * 1.5 cup water
    * 12 Mission Corn tortillas, shredded into small pieces
    * 8 Canned Roasted Green Chiles
    * 2 TBSP Chopped onion, dried
    * 2 Cups Shredded Cheddar Cheese

Tips

To ensure the tortillas do not come out too dry, use two cans of soup and 1.5 cups of water. If you like it less spicy, you can remove the seeds from the chiles.

Directions

First, chop the leftover turkey into bite-size pieces. Shred 12 Corn Tortillas into bite-size pieces. Chop green chiles into bite-size pieces, removing the seeds if you would like it to be less spicy. Shred 16 oz. cheddar cheese, or more or less to taste.

Combine turkey, green chiles, 2 cans of Cream of Chicken Soup, and 1 to 1.5 cups water in a bowl.

Layer: tortilla pieces, turkey and soup mixture, and cheese on top. Add another layer of tortillas, turkey mixture, and cheese in an oven-safe casserole dish.

Cover and bake for 35 minutes or until hot and cheese is melted.
