Number of Servings: 4

Ingredients

    1 cup of diced onions
    1 cup of diced green and yellow peppers
    2 cloves of garlic
    1tbsp of olive oil
    1 small can of spicy chopped tomatoes
    4 cups of fat free low sodium chicken stock
    1 tsp of cumin
    1 pound of talapia fillets cubed
    1 tbsp of tahini
    1tbsp of lemon zest
    1/4 cup of chopped cilantro

Tips

Goes good with a couple of slices of whole grain bread.


Directions

In a 3 quart sauce pan heat olive oil on medium and cook onions and peppers for 5 minutes till they are softened but not browned. Add tomatoes and cumin and heat for 1 minute. Add stock and bring to a boil. Then add the fish and tahini bring back to a boil and then simmer for 3 minutes till fish is cooked. Stir in lemon zest and cilantro and serve.
