1/4 Cup Coconut or other milk
1 Ripe Avocado
1/4 Cup Frozen Blueberries or other fruit for sweetness
2 Tbsp Carob or Cocoa Powder
Few drops Liquid Stevia
1/2 tsp. cinnamon
1/2 tsp Vanilla Extract (mine was Alcohol-free not sure how regular would taste)
If you want it thicker or thinner, adjust the amount of milk. For a sweeter pudding add some banana. Because of the Avocado it may brown if kept over night- to help with that put a layer of plastic wrap directly and tightly over the top of the pudding within an airtight dish and refrigerate.
Put milk in first.
Add all other ingredients and blend until smooth.
Serving Size: 1 Avacodo makes 2 Servings but you'll want to eat it all
