Ingredients

    6 medium potatoes, about 2 pounds
    1 cup Lentils
    2 Tbsp Olive Oil
    1/2 Onion chopped
    1 cup Carrot chopped
    1 cup frozen Sweet Corn
    2 stalk Celery chopped
    3 cloves Garlic
    2 cup unsalted Vegetable Stock
    1/2 tsp. Thyme
    1/2 tsp. Basil
    1/2 tsp. Rosemary
    3/4 cup nonfat milk

Directions

Cook the potatoes with the garlic, then mash the potatoes, we added the milk to make the potatoes creamier. After starting to cook the potatoes, start cooking the lentils for about 15-20 minutes. While the potatoes and lentils are cooking, chop the onion, celery, carrots, and add to the oil to cook, then add the corn the last few minutes. Place in greased baking pan, or use individual ramekins to bake in, spread the potatoes over the mix and bake at 400 for 45 minutes.
