Introduction

Ingredients

canned chopped plum tomatoes or 4 plum tomatoes (if using fresh you will need 1cup Passata - very thick tomato juice)
half a large onion diced
canned new potatoes diced or par-boiled new potatoes diced
1 cup milk
oil for frying
1tsp curry powder and 2 crushed garlic cloves or 2tsp curry paste (tikka)
Directions
1)par-boil potatoes and dice
2)fry onions till soft
3)remove from heat and add garlic and curry powder, stir in.
4)add par-boiled potatoes coat with onion and spice mix
5)return to heat, gently heat potatoes through add chopped tomatoes (if using fresh tomatoes add 1 cup passata aswell)
6)bring to boil then reduce heat to simmer for 5 mins
7)add milk stir in and simmer for a further 5 mins
- if sauce is runny/thin stir in a sprinkle of plain/all purpose flour to thicken
