Introduction

Ingredients

    1 box Ancient Harvest Quinoa elbow macaroni
    3/4 cup fat-free evaporated milk
    1 cup low-fat cottage cheese (1%)
    1/2 cup low-fat ricotta cheese
    1/2 cup low-fat shredded cheddar cheese
    1/2 tsp nutmeg
    1 tsp Parmesan cheese
    1 tbsp Panko bread crumbs
    1 dash each of salt + black pepper

Directions

1. Cook the macaroni according to package instructions.
2. Preheat oven to 350 degrees. Heat milk in saucepan over low heat and add cheese until they melt, stirring occasionally.
3. Stir in nutmeg, pepper, and salt, and remove cheese sauce from heat. Combine with cooked pasta and mix well.
4. Pour mixture into casserole dish and sprinkle with parmesan cheese & bread crumbs. Bake the casserole for 15-20 minutes, or until bubbly and the top browns.
