1 398ml can crushed pineapple
3/4 cup cocoa powder
1 tsp baking powder
1 tsp baking soda
1 cup rinsed and drained black eyed peas or other white bean
1/2 cup olive oil
2 large eggs
1/2 cup milk
2 tsp vanilla
Directions
Preheat oven to 350F, spray 2 pans with oil. Mix dry ingredients in a large bowl. In a food processor, blend beans and wet ingredients. Pour wet ingredients into dry and mix. Pour into 2 pans, bake for 30 - 40 minutes.
Serving Size: Makes 2 loaf pans or round cake pans cut in 12 servings each. 24 servings total.
