Introduction

This is so easy to make and my family never leaves any leftovers. I always spray the slow cooker with Pam first when I make this so nothing sticks. This is so easy to make and my family never leaves any leftovers. I always spray the slow cooker with Pam first when I make this so nothing sticks.

Ingredients

    1 lb lean ground beef
    6 large whole wheat tortillas
    1 package low sodium taco seasoning
    1-1/4 cups water
    1 can pinto beans - rinsed and drained
    1 can black beans - rinsed and drained
    2 cups shredded reduced fat cheese

Directions

1. Brown ground beef in skillet over medium-high heat. Add taco seasoning and water. Simmer for 10 minutes over low heat. Add drained pinto beans and black beans and cook for 5 more minutes.

2. Spray the slow cooker with Pam. Place a layer of tortillas to cover the bottom of the slow cooker. Next put a layer of the ground beef, then a layer of cheese. Repeat the layers until you run out of ingredients. End with a layer of tortillas on the top. Sprinkle with remaining cheese.

3. Cover and cook on high for 2 hours.
