A super quick and easy side dish A super quick and easy side dish
Number of Servings: 2

Ingredients

    250g red cabbage (approx 1/8 of a cabbage)
    40g of red onion (approx 1/4 of an onion)
    2 Tablespoons on mint
    40ml of lemon juice
    1/4 teaspoon of cayenne pepper
    salt and pepper to taste

Directions

Use your food processor with the slicing attachment

Run the red cabbage, onion and mint through the food processor

Tip it into a bowl and add the lemon juice, cayenne pepper and salt and pepper.

Toss the salad well to mix the lemon juice through.

Serving Size: Makes 2-3 side servings
