Introduction

Ingredients

    2 Tbs Olive Oil
    1 onion, diced
    3 celery stalks, diced
    3 tomatoes, diced
    1 tsp salt
    2 cans of cannellini beans (15 oz cans)
    2 cloves garlic, minced
    6 cups chicken broth
    1/4 cup fresh parsley

Tips

Try topping with a tablespoon of grated parmesean cheese!


Directions

Heat olive oil in pot, add diced onion and celery, saute 5-6 minutes until soft. Add tomato and salt, saute for additional 2-3 minutes. Add chicken broth, garlic, and cannellini beans. Bring to a boil, then reduce heat and simmer for 20 minutes. Add parsley, continue to simmer for 5 additional minutes.

Serving Size: Makes 10 1-Cup per servings.
