Ingredients

    1 (12 oz.) package of shrimp, raw, no tails
    1 cup chopped summer squash
    1 tbsp. coconut oil
    4 tbsp. coconut flour
    1 tbsp. curry powder
    2 tbsp. soy sauce
    1 tbsp. lemon juice
    1 tbsp. garlic powder
    1 tbsp. crushed dried red pepper
    1/2 cup cilantro
    1/2 cup chopped green onion
    1/2 tsp salt or salt substitute

Tips

If you aren't on a low carb diet, serving this dish over a bed of wild or brown rice would work well.


Directions

Mix all ingredients together in a stoneware cooking dish. Cook at 400 degrees for 35 min., or until shrimp are well browned.
