Ingredients

    Black Eyed Peas, 1.5 cup pre-soaked, then cooked til soft
    Kale, 16 oz (454 grams) fresh, chopped
    1 large onion, chopped
    1 tsp. olive oil
    1 tbsp. salt
    1 tbsp. pepper
    1 tbsp dried garlic
    4 small sundried tomatoes, about 14 grams
    1.5 cups chicken broth

Directions

Saute onion in olive oil, add kale slowly, and gradually include the broth, salt, pepper, dried garlic, and any other herb you like, such as rosemary. Stir and simmer about 30 minutes. Enjoy with cornbread or as a topping on rice.
