Ingredients

    2 Louisiana Hot Link Sausages
    1 tbs. olive oil
    1 medium onion chopped
    1 red or green bell pepper chopped
    5 celery stalks chopped
    1 medium zucchini chopped
    2 cloves garlic minced
    4 cups chicken broth
    1 cup brown rice
    1 can Rotel Original tomatoes with green chilies
    1 can diced tomatoes
    4 cups fresh or canned back-eyed peas
    2 cooked chicken breast (left-overs are best)
    3 cups water
    ½ tsp. Cajun seasoning
    ¾ tsp. cumin
    4-5 dashes of Worstershire Sauce
    ¾ tsp. Oregano
    Salt and Pepper to taste

Directions
Slice hot links cross-wise and fry in a large stock pot. Add olive oil, onion, bell pepper, celery, zucchini and garlic. Sautee until tender. Add remaining ingredients and cook covered, on low until rice is cooked, stirring frequently. Add more water if needed.
