Ingredients

    Layer per jar:
    1/3 cup red beans, washed and soaked for 3 hours
    4 oz turkey smoked sausage cut into thin slices
    1/3 cup chopped onions
    1/3 cup chopped celery
    1/4 cup chopped green bell pepper
    1 minced clove garlic per jar
    1/3 cup crushed tomatoes
    2 teaspoons (or to taste) creole or cajun seasoning
    pinch of cayenne pepper
    salt and pepper to taste
    water or chicken broth to fill the jar - broth not counted in calories

Directions

Pressure can at 11 lbs PSI for 90 minutes (or for your altitude). Follow all manufacturer's instructions for safe pressure canning.

Serving Size: 2 servings 1/2 quart each
