Introduction

Ingredients

6 cups chopped broccoli
3 T extra virgin olive oil (divided)
dash of salt
1 cup quinoa
2 T red wine vinegar
6 cloves garlic, minced
2 T fresh parsley, chopped
½ tsp crushed red pepper flakes
½ tsp salt
½ tsp black pepper
4 scallions, diced
3 oz light feta (optional)
Directions
1. Preheat oven to 400 degrees.
2. Chop broccoli and cut stems into bite sized pieces. Toss broccoli with 2 T olive oil and salt to taste. Place in a large baking dish in a single layer. Roast for 20 minutes.
3. Meanwhile, cook quinoa per instructions.
4. Meanwhile, combine red wine vinegar, parsley, crushed red pepper, garlic, salt and pepper in a small dish. Add 1 T olive oil.
5. Combine quinoa, broccoli, scallions and feta in a bowl. Cover with red wine vinegar mixture and season to taste with salt and freshly ground pepper. Add more vinegar if desired.
