Introduction

Ingredients

    Chicken breast, skinless, 2
    Marinara sauce, about a half cup (1 cup used in the nutritional calculation for an estimate)
    Spinach, fresh, ~3 cups chopped (or half of a small bag)
    Ricotta cheese, whole milk, 15 oz
    Parmesan cheese, grated, 3 ounces
    Egg, fresh, 1 large
    Kalmata olives, pitted, 12 sliced into quarters
    Parsley, couple of dashes
    Basil, couple of dashes
    Fresh ground pepper, couple twists
    Sea salt, couple of dashes

Tips

You can easily alter this and add mushrooms, subtract the olives, or use more/different cheese. Try adding a little nutmeg and garlic powder to the cheese mixture. I experiment with it all the time! And....if you still crave something noodley, cook up some spaghetti squash :)


Directions

1. preheat oven to 350º
2. pound chicken breasts flat in a large ziploc baggie
3. in a big bowl mix all other ingredients together, sans the marinara sauce & chicken
4. in the very bottom of a glass baking dish (the smaller rectangley one) spread a few spinach leaves and a couple of spoonfuls of marinara sauce [you can also lightly spray the inside so this doesn't stick, but I've found that that's not needed if you put something into the bottom under the chicken]
5. layer: one pounded out chicken breast, 1/2 of the cheese and spinach mixture, & repeat [you can add a bit of marinara sauce to either the top or the layers, but I find that it makes it too watery. I prefer to spread some sauce on my plate before serving, then there is just enough when you scoop up a piece]
6. bake for 40 minutes (or until your chicken is done)
7. sprinkle a little more Parmesan on top (or mozzarella would be good, whatever you prefer)
8. put back in for about 5 minutes on broil and brown the cheese to your liking :)
9. remove from oven and let cool for about 5-10 minutes before serving
10. ENJOY

I slice mine while it is still in the pan into 4 servings and prior to placing it on my dish, I put down a couple of spoonfuls of spaghetti sauce.
