Ingredients

    17.5 oz ground beef, 93% lean
    I precooked bag of whole grain brown rice
    1/2 envelope of onion soup mix, about 4 Tbsp
    2 large eggs

    1 10.75 oz can of tomato soup


Tips

We also add potatoes, about 2 lbs, peeled and quartered. Measure your potatoes separately, as you would any potato. Nutrition info not included with this recipe for the potato portion, as they are optional.


Directions

Mix beef, rice, soup mix and eggs together, may only need one egg. Size of ground beef pkg can vary.
Spray inside of crock pot with cooking spray, if using potatoes place on bottom, put meatloaf on top, pour tomato soup over the top of everything and set crock pot to high for about an hour if you can, then turn to low, otherwise just leave on low for 8-10 hours, doesn't hurt to leave on longer if you need to. You can do the same thing in the oven at 350 for about an hour, maybe and hour and 15 minutes.


Serving Size: 1 oz meatloaf, once cooked makes about 12 servings
