Introduction

An adaptation of an excellent vegetarian split pea soup, with leftover country ham. (So, not so vegetarian anymore.) An adaptation of an excellent vegetarian split pea soup, with leftover country ham. (So, not so vegetarian anymore.)

Ingredients

    150g country ham, chopped
    1 large onion, diced
    2 small potatoes, diced
    2 carrots, chopped
    8 cups chicken broth
    2.5 cups dry yellow split peas
    1 bay leaf
    1 teaspoon dry mustard
    pepper to taste

Tips

If you are using salt cured ham, you will not need to add salt, otherwise, salt as well.


Directions

In a large sauce pan or small stock pot, over low heat warm the ham, once the ham begins to brown, add in the onion and sauté until tender. Add carrots and potatoes, cook for five minutes. Add broth, split peas, mustard, bay leaf and pepper, bring to a boil, then reduce heat and cover, simmer for an hour, stirring occasionally.

Serving Size: makes 10 1 cup servings
