Introduction
Alternative to beef goulash minus the naughty cream... for a treat you can use beef instead of chicken but change the green peppers to yellow peppers for sweetness perhaps. Ingredients

250g mushrooms, 2 medium onions, 2 large green peppers, sprinkle of garlic & cayenne pepper & green herbs & paprika, 4 x chicken breasts no skin or bone, 2 tins of chopped plum tomatoes, 1 portion chicken stock (and cream in the naughty version but not this one) :-)...... serves 4 - 5 and you can either have it on it's own or with a bit of crusty brown bread / rice.
Tips
the trick is to slow cook it, so the chicken softens and melts in your mouth - lovely! feel free to add/swap veg that you like each time you make it have a little experiment :-) maybe try a veg you've never had before etc... :-)
Directions
easiest instructions ever.... wash & chop raw veg and raw chicken into bite-size pieces and throw it all into the slow cook pot, add the seasonings. With the tinned tomatoes you just need to chop up and stir them for a minute in a different bowl with the chicken stock - do not heat just stir up. Add to the big pot with the other items. Switch on slow cook pot for 4 hrs. (or in ordinary oven try 100degrees for 2.5 hrs, turn it up to 180degrees the last half hr.) - enjoy!
