Introduction

Ingredients

5 links (16 oz cooked) mild turkey Italian sausage
2 stalks celery, chopped
1 onion, chopped
3 cloves garlic, minced
2 teaspoons dried parsley
1 teaspoons Italian seasoning
1/4 teaspoon crushed red pepper flakes
3/4 teaspoon salt
1/4 teaspoon fresh ground pepper
1 carton (32 oz) chicken broth
1 can (14.5 oz) stewed tomatoes, Italian Style
1 can (14.5 oz) diced tomatoes, Italian Style
5 oz fresh spinach, chopped
1 can (19 oz) cannellini beans, drained
Dash of Tabasco or other hot sauce
Tips
The longer you let the soup simmer the more flavorful the soup will be.
Directions
1. Cook sausage in dutch oven or stock pot, once cooked remove and reserve for later.
2. In the same dutch oven or stock pot cook celery, onion, garlic, spinach, parsley, Italian seasoning, red pepper flakes, salt, and pepper over medium heat until the onions are translucent.
3. Cut sausage into smaller pieces, and add to pot along with the chicken broth, tomatoes, and cannellini beans. Bring to a boil and then simmer on low for 15 to 20 minutes or longer if you want the flavors to meld more.
4. Optionally serve with grated Parmesan cheese.
Serving Size: Makes about 7-8 1-cup servings
