Introduction

I saw Bobby Dean do this on his new show. It looked like a winner to me. I made enough for 2 servings which is one sweet potato and adjusted the spices for my taste. Ingredients

    1 Large Sweet Potato
    2/3 Tbs Olive Oil
    1/2 tsp Cayenne Pepper
    1/4 tsp salt
    1/4 tsp black pepper

Tips

They often don't get real crispy, all depends on how my slicing is that day but I like them either way. Watch the spices, I'd go lighter the first time you try this. They are spicy!! DH puts a thin layer of onion dip made with Greek yogurt and always says 'more please.'


Directions

Line a large baking sheet with parchment paper. Cut the sweet potatoes into about 1/4 inch slices, I use a mandolin. In a bowl combine the EVOO, spice and mix together. Toss in the sweet potatoes and stir to coat each slice.
Line the prepared pans with the sweet potatoes and give them room, ie don't over lap them. I may spritz them with a bit more olive oil if they appear too dry.
Bake until brown and crispy. 10-15 minutes check that they don't burn after 10 minutes. You can turn them over if you like. I do sometimes.

    Very Good
    I love these. I used Mexican seasoning the first time I made these because I didn't have any Cayenne. They are delicious so I've never had them with the cayenne. I also use seasoned salt instead of regular. Sometimes I use refined coconut oil and sometimes olive oil. Delicious either way! - 5/15/16
