Introduction

Number of Servings: 3

Ingredients

    1 bunch of broccoli
    2 tbs soy sauce
    1 tbs sesame oil
    1 tbs peanut oil
    1 cup brown rice, cooked
    Lite smoked sausage, 7 oz (half a package) sliced
    2 cups zucchini
    1 can water chestnuts, drained

Tips

You can sub other vegetables. Try to make sure your veggie pieces are of similar sizes, or they will cook unevenly.


Directions

Cook sausage according to package directions (I use the microwave.) Heat 1 tbs peanut oil in a wok over medium high heat. Add Broccoli and zucchini. Stir fry 3 minutes. Add water chestnuts, soy sauce, and 1/4 cup of water. Cover for 2 minutes. Add sliced sausage and cook until vegetables reach desired doneness. Serve over brown rice, drizzling each serving with sesame oil.
