Ingredients

    1/2 lb. lean ground beef
    1 c. chopped sweet onions
    3 cloves garlic..finely chopped
    1 med. zucchini, cut in half lengthwise, sliced 1/4 thick
    1 - 15 oz can tomato sauce
    1 - 14.5 fire roasted tomatoes, drained
    2 tsp. fresh chopped oregano leaves
    1/4 salt and pepper
    8 oz. shredded mozzarella cheese

Directions

Heat oven to 375. Coat 2 qt. casserole dish with cooking spray. Brown meat in skillet with onions and garlic over medium heat. Add zucchini and cook 2 minutes longer. Add tomato sauce and drained tomatoes, oregano, salt & pepper. Bring to boil. Toss with cooked, drained pasta and pout into cassero;e dish. Cover with foil and bake for 25 minutes. Remove foil, sprinkle with cheese and back into oven until cheese has melted.
