Introduction

Ingredients

    1 package chopped, frozen spinach
    1 package 8 oz Neufchatel cheese
    1 container 8 oz light sour cream
    3 tbsp grated Parmesan cheese
    1 can artichoke hearts
    1 Tbsp Light smart balance butter
    2 tsp garlic
    Red pepper flakes to taste

Directions

Melt butter, add artichokes, garlic and spinach (thawed and squeezed mostly dry). Cook for about 5 minutes. Add the sour cream, neufchatel, and 2 tbsp parmesan. Cook until heated and thickened.
Serve topped with red pepper flakes and remaining parmesan cheese.
