Ingredients

    1 pound ex-lean gr. beef
    .25 C. chopped onion
    3 med. stalks celery chopped
    3 med. carrots sliced
    1 4oz. can mushrooms drained
    1 can low sodium chicken broth
    1/8 C. dry barley
    1 can diced tomatoes
    2 C. saurkraut drained and rinsed
    2.25 C. water
    1/2 pkg. frozen peas

Directions

Brown meat in pan adding onions half way through browning. Add all remaining ingr. except peas. Bring to boil, lower heat to simmer. Simmer 20 min. Add peas, heat through.

Serving Size: 6.5 two cup servings, or 13 cups
