Ingredients

2 Tbs of Coconut flour
1/2 tsp of baking soda
1/4 tsp of sea salt
1 tsp of pure vanilla extract
1/2 Tbs of butter (melted)
3 large eggs
1 Tbs of butter
Tips
This recipe is gluten free and sugar free and meets specifications of the SCD diet. All ingredients should be pure and organic if possible.
Directions
Blend all ingredients with a hand mixer (electric or manual), the coconut flour is very dry and needs a lot of action to combine with other ingredients. Batter should be thin, not thick like a traditional pancake. The batter will rise up as it cooks over medium low heat. I spray a stainless steel omelette pan with oil in a Mr. Misto, heat the pan on Medium heat for 5 minutes then add batter and turn down heat to medium low to prevent sticking.

I love this recipe! I needed an extra egg or a touch less coconut flour to get the thin batter called for but that worked fine for me. This might be my favorite grain free pancake recipe just for the simplicity -- a little coconut flour transforms your scrambled eggs into a stack of pancakes! - 3/16/13
