Number of Servings: 4

Ingredients

    2 cups of cooked brown (green) lentils
    1 cup of chopped parsley
    2 tbsp. chopped chives
    1 tvsp. very finely chopped or grated onion
    3 tbsp. balsamic vinegar
    2 tbsp. olive oil from the very best
    Salt and Pepper to taste

Tips

Serves 3 - 4 as a side dish.


Directions

Soak the lentils for a few hours to reduce cooking time.

It is important that the vinegar is added to the lentils whilst they are still hot.
Add all other ingredients and serve.
This salad is best when eaten still a bit warm.
