Number of Servings: 4

Ingredients

    4 individually frozen Salmon pieces
    10 pecan halves (finely chopped)
    2 tsp brown sugar
    1tsp or a little more sage
    salt and pepper
    Canola oil cooking spray

Directions

1. Thaw salmon
2. Chop pecans, very finely
3. Mix pecans with the sugar, sage, salt and pepper
4. Dry salmon pieces by pressing them in between a paper towel
5. Press each side of each salmon piece into the pecan and spice mix, press hard and try to make as much mix stick as possible
6. Heat a non-stick pan on medium heat, spray with cooking spray
7. Carefully add the coated salmon pieces
8. Cook gently on medium (no higher, so the pecans don't burn) heat, turning a few times until salmon is firm and opaque
9. Eat and enjoy, especially with a side of mashed potatoes and spinach!
