Ingredients

    -4 medium sized Romero Tomatoes, blanched and skinned
    -3 clove of garlic, crushed
    -Dried or fresh oregano, by eye (~1 tbsp)
    -Dried or fresh basil, by eye (~1 tbsp)
    -Dash of salt and pepper (add more or less, your preference)
    -Crushed Red Pepper, just a dash, but you can do it by eye
    -1/2 cup of extra virgin olive oil

Tips

The color comes out pretty light, but it's really good as a pizza sauce! I usually put MORE herbs in than is marked because I like intense flavors. The garlic can get a bit powerful so if you want to cut back on that, it still tastes great.


Directions

-Start boiling water in a pot and prepare a bowl of ice water.
-Rinse your tomatoes and cut a shallow 'X' in the bottom of each.
-Once the water is boiling (rolling boil), drop the tomatoes in and let them sit for about 15-20 seconds. Remove them and put them into the ice water.
-Peel the skins by hand or use a paring knife.
-Place in blender and puree
-Add the garlic and the spices/herbs. Mix well
-Add the olive oil and puree again

Finished!

Serving Size: Makes 4-8 cups depending on tomato size
