Ingredients

    2 thick slices ham
    1-2 can great northern beans
    2-3 large carrots, diced
    1 large stalk celery, diced
    4 cups water
    dash cumin & garlic

Tips

The longer you simmer, the thicker and more concentrated the soup becomes. If you drain the carrots once cooked and just use the juice from the beans it is also much thicker. Very high sodium from the ham and the beans juice though.


Directions

Put 4 cups water in a sauce pot. Dice the carrots and add them once boiling. Dice the celery, and add that after about 5 minutes. Then dice the ham and add it plus the whole can of beans. If using 2 cans, drain the second and just add the beans. Add garlic and cumin to taste, and simmer for at least 30 minutes.

Serving Size: Makes 4 2-cup servings

    This is a soup I often make to use up leftover ham. I also add 2 small potatoes sliced, and substitute 2 cups chicken broth for 2 of the cups of water. I season the soup with a little Mrs. Dash if needed and don't use cumin or garlic. - 8/20/12
