Ingredients

    450g Zuchinni, grated
    1 large onion, peeled and diced
    1/2 red pepper, diced
    3 slices shaved ham, extra lean, diced
    250g cold smoked salmon, diced
    100g cheese, grated
    100g flour
    1tsp baking powder
    6 eggs, lightly beaten
    Parsley, 1tsp

Tips

Great for dinner, but also very portable as a lunch, can eat this hot or cold


Directions

1. Preheat oven to 180'C. Grease a 1-liter ovenproof dish or baking tin.
2. Put all ingredients in a large bowl, mix well and season. Pour into a prepared dish and bake for 40-45 mins until golden brown on top and a skewer inserted into the middle comes out clean.
3. Cool, slice and serve with a fresh salad.
