Ingredients

    4 skinless chicken breasts
    grated rind and juice of 1 lime
    1 tbs honey
    1 tbs olive oil
    1 garlic clove, chopped (optional)
    1 tbs choppe dfresh thyme
    freshly ground black pepper

Directions

Preheat oven to 375. Arrange the chicken breats in a shallow roasting pan.

Put the lime rind and juice, honey,oil,garlic, if using and thyme in a small bowl combine thoroughy. Spoon the mixture evenly over the chicken breasts and season with pepper.

Roast the chicken in the preheated oven, basting every 10 minutes, for 35-40 min, or until the chicken is tender and the juices run clear when a skewer is inserted into the thickest part of the meat. If the juices still run pink, return the chicken to the oven and cook for an additional 5 minutes, then retest. As th echicken cooks , the liquid in the pan thickens to give the tasty, sticky coating.

    Don't know what I did wrong, but the liquid never thickened and the chicken didn't have much flavor. I'll try making this one time. If it comes out the same, I won't keep the recipe. - 8/6/09
