Ingredients

    2 cups dry lentils, picked over and rinsed
    3 medium carrots, peeled and cut into large chunks
    3 large celery stalks, cut into large pieces
    2 large onions, cut into large pieces
    2 medium garlic cloves, minced
    3 bay leaves
    1/2 tsp dried thyme
    1/2 tsp salt
    1/4 tsp black pepper
    8 cups beef broth
    3 slices Canadian style bacon, diced

Tips

For A Thicker Soup: remove 1 cup of lentils and process them in a food processor and re add them to the soup.


Directions

Place all ingredients in a large pot. Pick over dry lentils and rinse. Add to pot. Simmer until lentils are cooked Approximately 1 to 2 hours. Remove bay leaves and serve.

Serving Size: Yields about 1 1/2 cup per serving
