Introduction

Ingredients

    1 Tbsp Olive Oil
    1 Small onion
    1 Stalk Celery
    1 Tbsp Chopped Garlic
    1/2 tsp Thyme
    1 28 oz. can Muir Glen Fire Roasted Diced Tomatoes
    28 oz. of water
    1/2 Package of Frozen Spinach
    1 can Member's Mark Breast Only Chicken
    1 tsp Splenda
    Salt & Pepper to taste

    Heat olive oil in a large soup pot. Dice onion and celery and add to hot oil along with garlic, thyme, salt and pepper. Sweat vegetables then add chicken. Once chicken has lightly browned, add tomatoes, water, spinach and Splenda. Bring to a rolling boil for 3 minutes then simmer for 20 minutes. Add additional salt and pepper to taste.

Tips

Pot can be deglazed with red wine before adding tomatoes and water.
