Ingredients

Canadian Bacon, 1 slices (6 per 6-oz pkg.)
Egg, fresh, 1 large
*Bays English Muffin (1 muffin), 1 serving
*Butter Flavored Cooking Spray, 1 serving
*Kraft 2% American Cheese Singles, .50 serving
use some freezer paper to wrap sandwiches up and they freeze nicely.
Tips
this sandwich has less then 300 cal. and lots of protein. I find making my meals in advance helps me to avoid over eating or not eating enough.
Directions
I cook my sandwiches up in advance on Sunday and freeze them for the week.
I use a long nonstick pan sprayed lightly with the butter flavored cooking spray. I cook six eggs the way I like them and put them to the side to let them cool. i then cook the bacon lightly on the same pan searing them quick and putting them to the side to cool. I take three slices of American cheese and split them in half.
I get my freezer paper ready and start assembling my sandwiches: english muffin bottom, 1 egg, 1 slice Canadian bacon, half slice American cheese and place the top muffin. i wrap up my sandwich with the freezer paper and label. I make up 5 sandwiches for my work week.
nowI have a healthy "on the go" sandwich I can nuke in the am to take with me. I nuke mine for 40 sec on one side and flip and do another 40 sec, but your microwave may vary.
