Introduction

This is a fast way to make a savory dish for cold nights. I can add a bit more spice for the adult servings, but my picky 8 year old LOVES it as is. This is a fast way to make a savory dish for cold nights. I can add a bit more spice for the adult servings, but my picky 8 year old LOVES it as is.

Ingredients

    6 frozen skinless, boneless thighs
    1 jar TJs Chile Verde
    1 can red kidney beans
    1 can Canellini kidney beans
    1 can black beans
    2 cans Stewed Tomatoes
    1/2 can black olives, crushed
    1 cup turkey broth
    2 t ground cumin

Tips

Use whatever kind of beans you have on hand. I freeze in 2c containers and give away in quart containers.


Directions

Throw everything into a 6 quart crock pot and cook for 4 hours on high or 6-7 hours on low. (Rinse the beans from each can before adding.) After cooking, pull out the thighs, chop/shred into bite size pieces and return to the pot.
