Introduction

Ingredients

    9 Whole Wheat Lasagna Noodles
    3 cups low fat ricotta cheese
    1/4 cup freshly grated Parmesan Cheese
    1 8 oz package of reduced fat pork sausage
    3 large egg whites
    2 Tbsp chopped parsley
    1 tsp garlic powder
    1 pkg (9oz) frozen chopped spinach, thawed and squeezed dry
    2 1/2 cups low fat, no sugar marinara sauce
    8 oz finely shredded low moisture park skim mozzarella cheese

Directions

Cook the noodles according to package for al dente
Stir together the ricotta, 3 tablespoons of the Parmesan, the egg whites, parsley and garlic powder. Stir in the spinach until well combined. Season with salt and ground black pepper to taste.
Cook the sausage and break it up.
Spread 1/2 cur of the marinara sauce over the bottom of a 13"x9" glass bottom baking dish. Lay 3 noodles across the bottom. Layer 1/3 of the ricotta cheese mix, add 1/3 of the cooked sausage, then 1/3 of the mozzarella. Repeat the layers. On the top layer add the remaining Parmesan cheese.

Bake 30 minutes at 350 covered with foil, remove the foil and bake 5-10 more. Cool 5 minutes and serve.
